This is a 1960s era color film about Blue Lake Beans: The Aristocrat of the Green Bean Family. The film is narrated. Blue Lake Green Beans (Phaseolus vulgaris) are among America's favorite vegetables in the home garden. The movie opens with an animated green bean, with a top hat showing us the many ways green beans can be served. The Blue Lake variety of green bean is grown only in the states of Washington and Oregon :27. The Blue Lake is a pole bean. Green beans thrive in the Pacific Northwest. The fields of green beans are irrigated 1:00. Towering snow-covered peaks and cool mountain lakes and streams along with dependable rainfall help the beans thrive 1:30. Each spring the crop is plowed under 1:50. The beans are selectively bred 2:05. Oregon State University has a research and development bean program 2:15. A horticulturist points out some of the bean’s characteristics 2:25. In the food technology laboratory at Oregon State University, staff and students work to improve the beans 2:58. Bean taste tests 3:08. Early spring and a highly effective nutrient is added to the soil. Weed spray is applied to the crop 3:45. Cultivators promote growth around the new bean sprouts 4:00. Heavy posts are driven at the ends of each row of beans 4:15. Between them smaller posts are set out 4:30. A machine stringer attaches guide wires to the posts, covering the fields 4:51. The farmers assist nature by plowing and turning over soil during the growing season 5:00. The plants have finally matured and the aristocrats come to life 5:20. Irrigation provides additional moisture as needed 5:33. Late in July, the Blue Lake aristocrats are ready for harvesting 6:10. Pickers come from all walks of life and are paid by the pound 6:20. Timing for delivery is important 6:35. The beans ride up a conveyor belt on their way to a wash and then to the cannery 7:05. There are six sizes used in canning 7:22. Snipping machines cut off both ends of the beans 7:35. Quality control and inspections 7:56. Hot water rinse and blanch before canning 8:09. Vertical packing requires a good deal of hand work 8:20. Frequent samplings are taken from the various packing styles for a final quality test 9:15. Mr. Blue Lake is the aristocrat of the Green Bean family 9:35. Different dishes are featured using the Green Bean. A bean, corn, onion, egg and beef dish is prepared 10:04. Many seasonings are used 10:30. Chili sauce is added 10;40. The dish is cooked over a low heat for 10 to 15 minutes 10:50. Steak and bean bundles for six are prepared with cube steaks. A crouton and butter dressing is added. The meat is wrapped and put into a casserole dish and then covered in dressing 11:35. The dish is put in the oven and baked for 20 minutes at 350°. Chinese style Blue Lakes are prepared 11:55. Radishes and green beans are sautéed with an Asian mix. Shrimp are added 12:48. Blue Lakes are delicious served cold, right out of the can 13:04. They are great in salads 13:08. A mold salad 13:25. Blue Lakes in an oil and vinegar dressing 13:33. There are hundreds of ways to enjoy Mr. Blue Lake beans. The finest flavor at the lowest cost.
