Part III. Equipment." The movie shows how proper cleaning and sanitation of food equipment in a hospital promotes the good health of everyone, whereas poor sanitation can result in a disaster. The film opens with men getting dressed and cleaned up in a hospital locker room. A man in a chef’s hat comes in and talks to a mess attendant -- one of the men who keeps the kitchen clean 1:00. The chef offers the man a ride home 2:00. The men discuss the importance of keeping things clean in a hospital kitchen 2:20 Women talk as they wait online for the bus 2:25. Cleanliness is a matter of life and death in a hospital. The men drive home and talk 3:10. The man recalls a time when he was a mess attendant and the chief cook was taking meat from a pan 3:21. The dietitian comes from her office and speaks to the chief cook 3:32. The doctor says there is a rash of food poisoning running through the hospital and there are several cases already 3:50. The outbreak is violent and widespread. The nurses speak about finding out the source of the food poisoning 4:15. The nurse speaks to a man with food poisoning 4:30. The man had the minced chicken. Patients and staff were getting sick from eating meat loaf 5:06. The dietitian called a meeting of nurses and kitchen staff 5:11. There was nothing wrong with the meat and there was nothing wrong with the meat grinder until a particular employee started to use it 5:30. When John, the employee, was grinding chicken the day before he had a sore on his hand and was not wearing gloves 5:38. Germs from that sore spread throughout the chicken and bacteria stayed in that machine 5:48. Because he didn’t clean the machine after using it, the meatloaf was also contaminated 6:02. The men are back in the car talking about the story 6:15. An equipment cleaning demonstration is done 6:50. Breadcrumbs are run through the grinder to remove dirt 7:00. Grills and ovens are scraped and scrubbed 7:15. Loose crumbs are brushed out of a toaster 7:23. Excess food is scraped from dishes before washing 7:35. Dishes are dipped in hot water for rinsing 7:49. Floors are scraped before cleaning 7:59. Always disconnect equipment before cleaning and keep water away from motors and wires 8:10. Every part of the machinery needs to be scrubbed with soap and water 8:49. Fryers are boiled out with hot soapy water 9:24. Scouring may sometimes be necessary 9:32. All parts of the equipment must be cleaned 10:03. Rinse your items well. There’s no point in scrubbing hard if dirty wash water is going to be left on the surface of your cleaned items 10:35. Several rinses are necessary to remove cleaning compounds 11:00. Drying equipment is also very important. Air-dry whenever possible 11:20. Cleaning tools must also remain clean 11:45. The men are back in the car speaking again 12:06. The mess attendant starts to appreciate the importance of his job in keeping things clean at the hospital 12:42.
